Ingredients and spices that need to be Prepare to make Shish Tauk Platter:
- For chicken marination:
- 2 chicken breasts cut into thick chunks
- 1 tsp red chilli powder
- 1 tsp black pepper powder
- 3 tsp tikka masala
- 4 tsp lemon juice
- 1/2 cup cream
- 1/2 cup greek yoghurt /any thick yoghurt
- 1/4 cup mayonnaise
- to taste Salt
- For frying chicken :
- 1 cup oil
- A few soaked skewers
- 1 piece coal
- 1 tsp purified butter (ghee)
- For stir fry vegetables:
- 2 large potatoes cut into cubes (boiled)
- 2 large tomatoes cut into cubes
- 2 large onions cut into cubes
- 2 cup cabbage cut into cubes
- 2 large capsicum cut into cubes
- 4-5 green chillies
- 4-5 tbsp oil
- For Hummus :
- 2 tin boiled chickpeas
- 1/2 cup mayonnaise
- 1/2 cup cream
- 2 tsp sesame seeds paste
- to taste Salt and pepper
- 2 cloves garlic
- 5 tbsp water
- 5-6 tbsp extra virgin olive oil
Instructions to make to make Shish Tauk Platter
- In a big mixing bowl add chicken and all the ingredients for marination and mix well. Refrigerate for at least 1 hour or keep overnight.
- Now in a wok or pan, heat oil and meanwhile set the chicken chunks onto the skewers.
- Shallow fry the chicken on medium high flame for about 2-3 mins each side.
- Meanwhile in another wok or pan add oil and add all the vegetables and fry on medium high flame.
- Now heat the coal and place all the cooked chicken skewers on the vegetables.
- Place a small piece of aluminium foil and place the coal on it. Add ghee on the coal and cover the lid of the wok for about 3-4 minutes.
- Meanwhile in a jug add all the ingredients for hummus and blend till a smooth paste is formed.
- Now serve the shish tauk with hummus, vegetables and pita bread/ khubus/ turkish roti.
